Collection: Shochu

Shochu is Japan's native distilled spirit! It can be made from a huge variety of ingredients, but the most popular are imo (sweet potato), mugi (barley), kome (rice), and kokuto (cane sugar). Because honkaku shochu, or authentic shochu, is single distilled there is amazingly vivid flavor that capture the true character of the original raw materials. Similar to sake, koji plays an essential role in the fermentation and provides a uniquely rich umami element that you won't find in any other liquor!

We also love the many traditional ways to enjoy shochu diluted with water.
