The experience: Try this neat, on the rocks or with a little soda water! Some sweetness & umami from the flavorful Japense sweet potato

Process:  aged for one year in a clay pot (kame), Koji: White (shiro)  ABV:24%

Ingredients: 83% sweet potato (imo) & 17% rice (kome)

Storage: keep in a cool, dark place
