The Vinification: Natural yeast, direct pressing, light racking, winemaking (AF exclusively) and light filtration prior to bottling. 6 months aging on laths to to produce a bottle refermentation. Just a touch of sulfur at bottling (1.5g/hl). No fining prior to bottling. The Experience: Pale yellow color reveals discrete but assertive bubbles with notes of pear |
