A blend of destemmed Delaware, Niagara, and Neo Muscat. Various amounts of skin contact were used, 24-hour or 12-hour. Unfermented Delaware juice is added at the end to kick off re-fermented in the bottle.
The scent is tropical papaya and mango, plus the juicy feeling of fresh pear. The taste is also refreshing and juicy; with a pleasant acidity and umami finish, this is a great food wine.
Spontaneously fermented with wild yeast. Unfined, unfiltered, bottled without any additives. 11.5% abv
