We first met the folks from Patois Cider at Rule of Thirds when we hosted the ABV(Anything but Vinifera) event from Jahdé Marley. Patois poured many from their lineup and the "Morris" stood out to us as a great food cider.

100% Gold Rush apples from Morris Orchard in Monroe, VA, Patois Cider

The Vinification: Sorted apples were crushed to macerate for three days, with the cap kept wet by hand. After pressing, fermentation finished in a 350 L neutral French oak barrel and glass demijohns. Aged undisturbed for six months. bottled traditional method with organic sugar and its own yeast culture in early May 2021. Bottles aged on lees for 12 months before being riddled and disgorged by hand in early May 2022.

The experience: Without being painfully obvious, this cider really tastes like you're biting into an apple. It has the bright acidity from a crisp apple but also a subtle sweetness to round it out.
