Junmai Daiginjo Genshu / Senkin Shuzo, Tochigi

The experience: Careful when opening this bottle, it has trapped co2 that sometimes makes the bottle top fly off. This lively, almost spritzy, nigori is a cult favorite. Notes of white peach and mango with satisfying acidity and texture.

Process: Kimoto  ABV: 18%

Ingredients: 50% polished yamadanishiki

Storage: keep refrigerated, especially after opening
