Introducing "sake for natural wine lovers"! Many of these sakes here are brewed techniques that have been around for centuries. More and more breweries in Japan are tapping into these "low intervention" practices, creating big body, high acid, sometimes funky sakes that deviate from the more delicate and floral modern ginjo-shu.
To us, loud can mean high aroma, big texture, full body or even just BIG flavors. Funky is a little bit harder to pin down. But this is where you'll find bottles that cause to you wonder "wait, this is sake?"
