Winemaking     

The wine was mixed from 11 different grape varieties, mainly Chardonnay, four-11 years old vines. Even sick grapes with a poor appearance were actively used in the wine if they were sweet to eat. After pressing with a balloon press, fermentation proceeded in stainless steel tanks without temperature control, and at the final stage of fermentation the wine was bottled without added sulphites to give a slightly fizzy type. The wine was not oaked, allowing the freshness and fruity character of Japanese Chardonnay to be felt directly.
