The journey of creation: Assemblage 4

Our new Assemblage 4 took Founder-Maker Richard Geoffroy on his own journey into the soul of IWA – finally making it at the Kura in Toyama, in the serenity of the doma symbolically positioned between the rice fields and the brewing vats. IWA keeps pushing the envelope. The three-weeks of the Assemblage process resulted again in evolution, one further exploring the direction developed from A1 through A4, a step completed in the spirit of singularity, sophistication and intricate layering.

IWA 5 - Assemblage 4

Kimoto Junmai Daiginjo / IWA 5, Toyama

The experience: This elegant and full bodied sake covers a lot of ground. It's both fruity and custardy, while also savory, with notes of shiitake mushrooms and hazelnuts. The producer encourages playing around with temperature (and serving vesssels). When warmed, its rich acidity softens and the brew becomes silty and nutty. When chilled, the sake tightens, making it a great option for lighter foods for the spring and summer.

Process: Predominantly Kimoto 

Ingredients: 35% polished Yamadanishiki, Gohyakumangoku, Omachi. Five different yeast strains.

Storage: keep refridgerated

shipping outside of NYC is calculated through a common carrier at checkout! (monthly subscriptions are the only exception) orders go out every Thursday unless stated otherwise

please note: we can only ship sake & wine outside of new york state (whisky or other spirits are excluded)

delivery is available for all of NYC at check out for $10! Wednesday-Friday only. orders must be placed before 1:30pm for same day delivery, otherwise you can plan for the next working day.

Free In-Store Pickup:
The quickest, easiest way to get your bottles! Your subscription will be available for pick up on the first Thursday of every month. Please use the code "FREECLUBPICKUP" or follow this link.
Shipping: 
Shipping east of the Mississippi River will cost a flat rate of $25. West of the river costs $35. Boxes are sent out the first week of the month.  We currently do not ship to the following states: ND, NH, UT, MS, AL, VT, KY, SD. As statutory laws are constantly changing, please note that this list is updated frequently. Bottles ship the first week of every month! Please let us know if you need us to hold your package.
Delivery:
$10 NYC delivery! Bottles will go out on the first Thursday of the month. Please use the code "10DOLLARNYCDELIVERY" at checkout or follow this link.
Please reach out if you won't be home to receive your order, we can pick a different date together. Somebody 21+ NEEDS to be home to sign for the bottles. If you'd like to pick up one month, let us know before the first of the month and we'll make sure you aren't charged for delivery.
