The Vinification: Natural vinification without any additives, indigenous yeast. A year of élevage in 500-liter wooden barrels of several wines for the Cabernet Sauvignon, and just a few months for the Merlot. Both vintages were blended right before the bottling in February 2022. Unfined, unfiltered, just a microdose of sulphur added during bottling. The experience: A floral and fruity nose, with blackcurrant & violet. |
