Shibata Shuzo has been brewing in the hills above Okazaki, Aichi since 1830 across nine generations of one family in a village called Kanzui, which translates to "god's water." That name isn't just flair; the spring they draw from measures among the very softest water in Japan, and it heavily impacts
every stage of all of their brews.

This soft water and a long, cold ferment are the whole reason Shibata's sake tastes the unique way it does: delicate and clean, but with more texture than you might expect.
