Amabuki's "I Love Sushi" Junmai is purpose built for the sushi counter; dry enough to cleanse the palate between bites, but with a soft acidity and moderate umami that keeps it from feeling one-note. About the Brewery: Amabuki Shuzo
Founded in 1688, Amabuki Shuzo is located in northern Kyushu in Saga Prefecture, an area known for bountiful sake rice harvests and the smooth groundwater that flows from nearby Mt. Sefuri. The brewery is famous for its use yeasts derived from various flowers to give their sakes unique aromatic profiles. Their motto is "Onko Sousei," which means learning from the past to create new and better things. While many of their sakes showcase floral experimentation, this bottle takes a more straightforward approach: a food-first sake designed to make your meal better.
