Production 8,900 bottles
Winemaking: Kyoho grapes from neighboring Tomi farmers were dried in the shade for days to weeks, concentratiting flavor and intensifying aroma. Rotten fruit was removed, and grapes were lightly crushed with a self made crusher and with boots, then basket-pressed over a day. Fermentation began spontaneously in a resin tank for about 10 days. Bottled with added grape juice from the original pressing, with fermentation finished in a month, trapping carbon dioxide. No racking to preserve lees flavors, no filtration, no additives.
