The Story
Sensation White is the approachable everyday refresher of the Emishiki line. Part of the brewery's "Sensation" line, designed to deliver modern, high-quality sake at an accessible price, this junmai genshu punches way above its weight class. Despite being positioned as their daily drinker, it's brewed with junmai daiginjo level rice polished to 50%, made with the locally grown Ginfubuki varietal, and fermented with a yeast that produces bright, tropical aromatics.
Tasting Profile
Aroma: Bright and aromatic, with notes of citrus, banana, red apple, and a touch of grape. The ginjo-ka (ginjo aroma) is lush and inviting.
Palate: Soft, rounded sweetness upfront, supported by a refreshing acidity that keeps everything in balance. The genshu strength adds body and presence without being heavy.
Finish: Clean and gently lingering, with a fruity sweetness that fades gracefully.

Founded in 1892 in Koka City, Shiga Prefecture, Emishiki Shuzo sits at the historic Minakuchi post station along the old Tokaido road. Now led by fifth-generation head Atsunori Takeshima, one of the most innovative brewers in the industry, the brewery is the only one in Shiga Prefecture that produces nothing but junmai sake.
