The Story
With a name like "World Peace," this sake has a lot to live up to - and it delivers! Emishiki's World Peace is a gorgeously aromatic junmai ginjo built around flower yeast, which produces glossy, tropical ginjo aromas that have made this brewery a cult favorite. This is a sake designed to be eaten with food. Rather than washing flavors away with sharp acidity, it lingers on the palate, integrating with the dish rather than competing with it. It's a sake that wants to play well with all cuisines.
Tasting Profile
Aroma: Glossy and tropical, with notes of pineapple and lychee. The lush ginjo-ka (ginjo aroma) is a hallmark of the brewery's flower yeast.
Palate: Soft sweetness upfront that supports the aromatic profile, followed by a full-bodied acidity that adds a slight pleasant astringency. Beautifully balanced sweetness and acidity.
Finish: Smooth and lingering, with the flavors staying present rather than washing away quickly.
Serving & Pairing
Serving Temperature: Chilled
Food Pairings: This sake has incredible range at the table. Try it with sautéed salmon, tuna sashimi, grilled fish, or lean beef. The way it integrates with food rather than cutting through it makes it surprisingly versatile.
Why We Love It
We love this bottle because it takes the "sake for food" philosophy seriously. The aromatics are showstopping, but that's just the preview. There's a thoughtfulness to how this sake is designed to interact with a meal. It stays with you, coating the palate and blending with whatever you're eating. That, plus the optimistic name and the undeniable quality, makes it one of those bottles you reach for when you want something special but don't want to overthink the pairing.

About the Brewery: Emishiki Shuzo
Founded in 1892 in Koka City, Shiga Prefecture, Emishiki Shuzo sits at the historic Minakuchi post station along the old Tokaido road, close to Lake Biwa. The region is known for Shigaraki ware ceramics and as a major rice producing area. Now led by fifth generation head Atsunori Takeshima, the brewery has embraced the mellow sweetness that has long characterized local sake, pushing it to the forefront of their modern style. Their philosophy is simple: sake is food that helps us live life to the fullest, a lubricant that bonds people together. Every bottle is crafted to bring joy and laughter to the table.
