The Cabernet Sauvignon is from Yamagata prefecture.
100% destemmed, skin fermented in glass fiber tanks for 20 days.
Then aged 60% in amphora,40% in barrels.After 9 months, blended both and a tiny bit of Cabernet Franc. Wild yeast, unfined, unfiltered, without any additives.
Grapes: Cabernet Sauvignon 92%, Cabernet Franc 8%
