The Chardonnay is from Yamagata prefecture.
Whole bunch pressed,and juice was separated to amphora & barrels.then finally started fermentation in amphora & barrels. Blended 60% amphora aging, 40% barrel aging.
Wild yeast, unfined, unfiltered, without any additives.
