The Story
If you are familiar with Hakkaisan, you are likely acquainted with their signature style. Known as Tanrei Karakuchi (clean, crisp, and dry), this hallmark of Niigata prefecture's regional flavor is a big part of Hakkaisan's DNA.
This nama genshu takes that philosophy and turns it up a notch. It's unpasteurized and undiluted, capturing the fresh, lively character of sake straight from the press while maintaining the balanced, refreshing profile Hakkaisan is famous for. Brewed through long, low-temperature fermentation with rice polished to 45%, it's luxurious without being heavy. An elegant daiginjo perfect paired with food or on its own.

Founded in 1922 at the foot of sacred Mount Hakkai in Niigata, Hakkaisan is one of Japan's most respected sake producers. The region is famous for its deep winter snowfalls, sometimes exceeding 10 feet, and that snow melt becomes the pure, soft water that feeds the brewery's dedicated spring. Hakkaisan's guiding principle is to produce the finest sake that people will never tire of, applying the highest standards to every bottle they make. That means handmade koji crafted in-house, small batch production, and slow fermentation at low temperatures. The result is their signature tanrei karakuchi style: clean, crisp, dry, and endlessly food-friendly.
