The Story
This is what happens when a legendary brewery uses historical methods to let nature do the work. Hakkaisan's Yukimuro is a junmai daiginjo that has been aged for a minimum of three years inside the brewery's Yukimuro (snow storage facility), a massive insulated warehouse packed with roughly 1,000 tons of snow from the mountains of Uonuma, Niigata. No electricity, no machinery, no vibration. Just snow, silence, and time. The result is a sake that is noticeably rounder, smoother, and more complex than its younger siblings, with layers of flavor that unfold slowly and reward patient sipping.
Tasting Profile
Aroma: Elegant and complex, with notes of green apple, Asian pear, vanilla, and a touch of spun sugar.
Palate: Round, smooth, and full-bodied. The three years of snow aging have softened any edges, leaving behind a velvety texture with layered flavors of nougat, honeydew, baked apple, and a savory umami backbone. One of Hakkaisan's most rich sake.
Finish: Mellow and dry, with a clean minerality that reflects the pure snowmelt water used in brewing.

Why We Love It
We love this bottle because it tells a story you can taste. The Yukimuro concept draws on centuries of tradition in Niigata, where snow was used to preserve food long before refrigeration existed. Hakkaisan built their snow-storage facility after the 2011 Great East Japan Earthquake as a commitment to natural, sustainable methods. Three years later, the sake that emerges is transformed: rounder, richer, and unmistakably shaped by the environment it aged in.

The region is famous for its deep winter snowfalls, sometimes exceeding 10 feet, and that snowmelt becomes the pure, soft water that feeds the brewery's dedicated spring. Hakkaisan's guiding principle is to produce the finest sake that people will never tire of, applying the highest standards to every bottle. That means handmade koji crafted in-house, small batch production, and slow fermentation at low temperatures. The result is their signature tanrei karakuchi style: clean, crisp, dry, and endlessly food-friendly.
