The Story
In a sake world that often chases higher and higher polishing ratios, Kinoene decides to go the other direction with this bottle. "Hachiwari" means 80%, referring to the amount of rice grain left remaining after polishing. By intentionally not polishing away much of the outer layers of the rice grain, the brewery preserves the proteins and fats that create deep, rich umami and a wilder, stronger personality. This is "Umakara" style, a portmanteau of Umami and Karakuchi (super dry). It’s a bold, rustic, and confident brew that is not afraid to remind the drinker that sake is made from rice!

Palate: This sake is a true umami bomb. It presents a satisfying weight and boldness that you don't see in sake with higher polishing rates. The flavor is savory and robust, with a dryness that keeps it from feeling heavy.

Serving Temperature: This bottle is incredibly flexible when it comes to temperature. When chilled, it shows the most restraint, but we think it shines when at room temperature or warmed up. Heat unlocks even a slight bit of hidden sweetness and even more savory depth.
Food Pairings: Because of its bold umami structure, this sake pairs well widely. It loves meat. Try it with a hamburger, steak, or rich stews. It stands up to fat and salt beautifully.

Iinuma Honke has been brewing in Chiba Prefecture for over 300 years (founded between 1688-1703). They are a cornerstone of their local community, blending centuries of tradition with a modern willingness to experiment. Unlike some secluded breweries, they are deeply integrated into Chiba's culture, even producing confections and sake goods to promote the region.
