Maboroshi "Nakao's Secret" Junmai Ginjo [720ml]

This sake brewery, Nakao Shuzo, is known for cultivating yeast from apples to brew their highly polished daiginjo sakes. While this particular brew does not have this special yeast, the makers still impressively achieve a green apple aroma with a classic Hiroshima-style softness.

The experience: This sake is a great representation of ginjo-style. It has the fruity ginjo aroma but it's subtle and soft, making it approachable and elegant. It's not a sweet sake, but it doesn't finish bone-dry either -- making it the perfect food sake. Try this with tacos al pastor!

Process: Sokujo ABV: 15%

Ingredients: 55% polished Hattan Nishiki
