About the Brewery: Imanishi Shuzo
Imanishi Shuzo was established in 1660 in the town of Miwa, Nara, a place considered by many to be the spiritual birthplace of sake in Japan. They brew in the shadow of Mount Miwa, drawing water from a sacred underground spring located directly on the brewery grounds, and source their rice from local contract farmers who irrigate from that same water vein. Their guiding philosophy is refreshingly straightforward: do every step correctly, with care, and let the drinker decide if it's delicious. That means washing rice in small batches, handling ingredients by hand, and refusing to cut corners at any point in the process. The result is sake that feels intentional and pure—a direct expression of place from one of the most revered brewing sites in the world.
