The Story
Minanogawa Muroka Junmai Ginjo is a hearty, full-flavored sake that rewards a little patience. "Muroka" means it skips the charcoal filtration step that many breweries use to smooth out rough edges and remove color. What you're getting here is the unvarnished expression of the rice, water, and yeast. It's bold and confident out of the fridge, but give it a few minutes to warm up and it really opens up, revealing a deep, textured character that lets you feel the quality of these ingredients on your palate.

Founded in 1867 in Ibaraki Prefecture, Inaba Shuzo operates with a simple philosophy: make everything the best quality possible, even everyday sake. To accomplish this, everything from rice soaking to fermentation, koji making, and pressing is done by hand by experienced kurabito (brewery workers) without the use of machinery, all grounded by meticulous data-keeping. The brand name Minanogawa honors the nearby Minanogawa River, which provides the water for brewing. Notably, Inaba Shuzo doesn't submit their sake to competitions, they brew only to inspire their customers, not to impress judges.
