The Story
This is Senkin at their most stripped-down and philosophical. "Nature" is part of the brewery's "Edo-gaeri" (return to the Edo Period) series, and it takes the concept further than any other bottle in the lineup. It's brewed with organic, heirloom Kame no o rice that's barely polished at all (90% of each rice grain remains), fermented in traditional wooden barrels (kioke) using only the wild, ambient yeast that lives naturally in the brewery, and bottled as muroka genshu (unfiltered and undiluted). No added yeast, no charcoal filtration, no water dilution. The result is something that feels like a sake expressed like a natural wine: bright, zesty, and full of unexpected complexity. A true minimal intervention sake.
Tasting Profile
Aroma: Layered and complex. Green apple, citrus, vanilla, and a touch of earthiness from the wooden barrel fermentation.
Palate: Lighter than you'd expect from a 90% polish. There's a bright, lively quality, with juicy fruit notes, a distinctive tart acidity, and the trademark savory depth of the kimoto method. The texture is lively and clean rather than heavy.
Finish: Quick and clean, with a citrusy tartness that lingers.
Serving & Pairing
Serving Temperature: Chilled or room temp, ideally in a wine glass to catch the aromatics.
Food Pairings: The high acidity and bright character make it a natural with citrus-dressed dishes, vinegar based preparations, and any and all pickled vegetables. It also pairs well with seafood (oysters, ceviche, shrimp shumai), anchovy toast, or rich proteins like pork chop or buttery escargot.
Why We Love It
This bottle is like Senkin's mission statement in liquid form. The Usui brothers, both inspired by the natural wine movement, wanted to prove that sake can express terroir just like wine does. All the rice is grown within a five minute drive of the brewery using the same water source that feeds their wells, and the wild yeast is native to the building itself. The fact that it drinks so light and lively despite being barely polished speaks to the quality of the ingredients and the skill of the brewers. About the Brewery: Senkin Shuzo
Founded in 1806 during the Edo period, Senkin is now run by 11th-generation brothers Kazuki and Masato Usui, who work together as brewer and toji. The brewery operates like a domaine: all of their rice is contract-farmed within five minutes of the brewery using the same water source that feeds their brewing wells. Their motto is "do nothing unnecessary," and all of their sake is brewed in small batches, muroka (unfiltered), genshu (undiluted), and bottle-aged at near-freezing temperatures. The name Senkin means "a crane serving a hermit."
