The Story
Suigei means "Drunken Whale," named after an alias of Yamauchi Yodo, the feudal lord of Tosa (now Kochi Prefecture) who was a legendary drinker. The brewery's entire philosophy revolves around making sake fit for pairing with food. Kochi is known for some of the best seafood in Japan, and the locals prefer their sake dry and crisp cleanse the palate and wash it down. This tokubetsu junmai is the brewery's signature expression of that concept: clean, dry (+7 SMV), with enough acidity to cut through rich and oily dishes while remaining super refreshing to drink on its own.
Tasting Profile
Aroma: Reserved. Gentle rice notes with a touch of rose.
Palate: Dry and clean, with a fine acidity and subtle umami. This is a sake that doesn't compete with food for your attention. There's enough body to have presence, but it stays lean and focused.
Finish: Quick, dry, and refreshing. A palate refresher with every sip.
Serving & Pairing
Serving Temperature: Highly versatile. Chilled for maximum crispness, room temperature for a more balanced expression, or warmed to open it up into something broader and more complex.
Food Pairings: This was designed for the dinner table, especially seafood. Tempura, sashimi (particularly fatty fish), simmered vegetables, or anything oily and rich. The dry and medium acid profile cuts through fat the way a good white wine does.
Why We Love It
This tokubetesu doesn't try to impress with flashy aromatics or unusual techniques. It's a sake that knows what it wants to be: a reliable, food-first pour that makes whatever you're eating taste better. The +7 SMV and moderate acidity make it one of the driest sakes on our shelf, and the quality is consistent bottle to bottle. It's the kind of sake to stock up on because it goes with everything.

The name combines an alias of the legendary drinking lord Yamauchi Yodo with the brewery's seaside location. Their entire philosophy revolves around "food culture": Kochi is known for its seafood and its hard-drinking culture, and Suigei makes sake specifically designed to match the regional dinner table. In 2018, they opened a second facility, the Tosa Brewery, equipped with modern brewing technology to expand production while maintaining their signature dry style.
