The Story
This is the full size bottle version of the same brewery behind the popular Bear Cup. Akebono Shuzo's approach to their flagship junmai is distinctive: they use an altered version of the normal three stage brewing method (san-dan-jikomi) where three different rice varieties are added on separate days. Gohyakumangoku goes in first, followed by Kame no o (adding umami and crispness), and finally Yume no Kaori (which softens and sweetens the ferment). After brewing, the sake is aged cold. The result is a layered, soft, and gently complex junmai that drinks well across a range of temperatures.
Tasting Profile
Aroma: Soft and nuanced, with notes of yogurt, cherry, apricot, and subtle violet.
Palate: Plump and smooth, with a gentle sweetness balanced by a crisp backbone. The three different rice varieties each contribute something different: body, umami, and a softening sweetness that ties it all together.
Finish: Clean and balanced, with a quiet persistence.
Serving & Pairing
Serving Temperature: Any. Slightly chilled (10-15C) to room temperature is the sweet spot for balance, while gentle warming brings out more umami.
Food Pairings: A true food sake. The soft, layered profile works well with grilled mackerel, scallops with butter, burgers, fish and chips, or steamed sweet potatoes.
Why We Love It
The three rice brewing method is what makes this bottle stand apart the most. Where most junmai sakes use a single rice variety (or two at most), Tenmei deliberately layers three varieties across different days to build interesting complexity. It's a thoughtful approach that gives this junmai remarkable depth.

About the Brewery: Akebono Shuzo
Founded in 1904 in the Aizu region of Fukushima Prefecture by Koshiro Suzuki, who came from a miso brewing background and focused on "the goodness of rice made by peasants." Now in its sixth generation, the brewery uses roughly 80% local rice with the goal of reaching 100%. Both "Tenmei" and "Akebono" mean "dawn," and the brand was created with the sentiment of the morning sun shining into the darkness.
