The Story
Tsukushi Kuro is a barley shochu from Fukuoka Prefecture that leans into the bold end of the spectrum. "Kuro" refers to the black koji used in fermentation, which produces more citric acid than white or yellow koji and contributes to the richer, deeper flavor profile. The shochu is then distilled at normal atmospheric pressure rather than vacuum, which preserves more of the robust, roasted grain character. After distillation, it's aged for five years. The result is a barley shochu with real weight and complexity.
Tasting Profile
Aroma: Roasted barley with warm, toasted grain notes.
Palate: Rich and full-bodied (especially for a shochu), with a warming mouthfeel even when chilled. There are hints of nuts, vanilla, and chocolate beneath the grain character, and a satisfying depth that comes from the five years of aging.
Finish: Smooth, warm, and lingering.
Serving & Pairing
Serving Temperature: On the rocks, mizuwari (with cold water), or oyuwari (with hot water) which accentuates the roasted aromas. Also great neat at room temperature.
Food Pairings: The robust character stands up to bold, fatty, umami foods. Think ramen, gyoza, yakitori, tonkotsu anything, or rich stewed meats. It also pairs well with sashimi and lighter fare if you have it on the rocks.
Why We Love It
Tsukushi Kuro goes the opposite direction of many super clean & light shochu by using black koji, atmospheric distillation, and five years of aging. It's shochu for drinkers who enjoy substance. Nishiyoshida Shuzo has been making barley shochu in Fukuoka since 1893, and the Kuro label is their flagship expression of what the style can be when you give it time and traditional technique. If you're a whisky drinker curious about shochu, this is a good starting point.
