Watari Bune Rice Shochu
This Rice Shochu is distilled from 100% Watari Bune Sake Rice. Huchu Homare Brewery won many awards for sake brewed with Watari Bune rice, earning the nickname, Liquid Gold. It is an heirloom varietal that is very difficult to grow and so went out of use for 50 years until 7th generation President, Takaaki Yamauchi of Huchu Homare Brewery, revived it in 1989 with just 14 grams of seeds. In sakes off season, he also brews small batches of Shochu using the very same rice.
This Rice Shochu is made using reduced vacuum distillation at uniquely low-temperatures between 106-107˚F. These time consuming and labor-intensive methods create a delicate and pleasant aroma paired with rich taste and a bright acidity on the palate, a shochu expressive of Ginjo sake.
Both creamy and light with notes of cantaloupe, grapefruit, honey and rice. Sip straight up at room temperature, over ice, top with sparkling water, or even gently warm.
